In Roundstone, a traditional Irish fishing village, tranquillity and community live side by side. The horizon softens, the sea mirrors the shifting skies, and local life moves at its own gentle rhythm. After a long walk along Gurteen or Dog’s Bay, the reward is simple but perfect — a hot whiskey beside the turf fire at King’s Bar, or a creamy seafood chowder and Guinness at O’Dowd’s, just below the mountain trail at Errisbeg.

Food as Emotion
As John and Sally McKenna note, “when you take food to the edge of the West, what gets stirred up is raw emotion.” That sentiment is felt strongly during Food on the Edge (FOTE) — JP McMahon’s annual symposium held in Galway, where global culinary voices gather to discuss food as art, activism, and connection. This year, speakers like Massimo Bottura, Alice Waters, Ana Roš, and Fadi Kattan joined Ireland’s own chefs to explore how food expresses place, culture, and emotion — themes that echo deeply here in Connemara.

Upcoming Collaboration: Aishling Moore and Bog & Thunder
This November, Within the Village partners with experiential travel curators Bog & Thunder and Chef Aishling Moore of Goldie, Cork’s Michelin Bib Gourmand seafood restaurant, for two exclusive feasts celebrating the west’s coastal bounty.
Chef Moore’s ethos of whole-fish cookery and support for independent fishermen aligns beautifully with our focus on sustainability and community. Together with Bog & Thunder, she will create an immersive dining experience inspired by the flavours and stories of Connemara.
